1 large ripe avocado ½ large cucumber 100g cherry tomatoes 8 large clean lettuce, kale or similar leaves 1 handful fresh basil Squeeze of lemon jucie A sprinkle of hulled hempseeds (or similar seed) Splash of extra virgin olive oil A sprinkle of nutritional yeast flakes(optional) Salt and pepper to taste
First cut the avocado into medium/small pieces and place in a bowl and cover with lemon juice. Next cut the cucumber and tomato into similar size pieces and combine with the avocado. Then add the roughly chopped basil, extra virgin olive oil, nutritional yeast flakes (if using) and stir everything. Then just simply load your chosen leaves with the mixture and finish with a sprinkling of your chosen seeds and season with salt and pepper before serving (never add salt to a fresh salad until serving – as the salt will break down the vegetables/fruit and create a lot of unwanted water)
