This session offers recipes to help you acclimatize to a time of year when nature and the environment is regenerating and transitioning from a colder climate to warm.

On the day we will cover:

Kale chips (cooked & raw)

Beetroot gazpacho w lemon cream & basil oil (raw)

Tofu & shitake ‘Vietnamese style’ pancake rolls (cooked)

Moorish griddled seitan w chermoula tomatos (cooked)

Garlic & kalamata focaccia (cooked)

Raw mixed berry cashew cheese cake

Raw chocolate ice cream

After all that we will then break for our feast!!!!! !!!.once we have fully feasted we will then spend the remainder of the day working on:

Saturday 2nd Feb 2013 10am - 4pm

This session intends to offer a wonderful selection of warming foods that will not only comfort your cravings but also nourish your body.

On the day we will cover a number of my personal favorite dishes that will be a hands on season of feast making, including:

Puy ragout stuffed butternut squash topped w puff pastry

Taco bowl stuffed w chilli molé

Mixed mushroom gyoza w wasabi pea puree

Tofu tamalés with fresh corn salsa

Aubergine maki roll w chili chili sauce

Apple glazed tempeh mini wraps

Mushroom & almond soup w herby dumplings

Raw chocolate torte

Port poached pear w avocado lime ice cream & ginger snaps

An introduction to RAW CHOCOLATE and all it's delicious life enhancing glory

This session will introduce ‘the student’ to raw chocolate – its history, agriculture, production and of course its taste………!

On the evening we will cover:

An explanation of all raw chocolate ingredients

Basic solid chocolate making

Soft truffle centre making

The lesson will be a mix of demonstration, discussion and good old fashioned hands on practical, in fact students will spend a large percentage of the evening getting stuck into some serious chocolate making fun!

Bittersweet - Dark Chocolate Masterclass

People have revered cacao for thousands of years and only relatively recently mastered how to best process it for maximum taste whilst retaining its vital life force.

We will cover most elements of chocolate making including tempering, making 'raw' chocolate bars, truffle making, a decadent & dark tart, raw ice cream and also a savoury Mexican style mole' to have with our lunch.

With superfoods being a 'buzz' word in the modern foodie world, this session aims to utilise everyday 'superfoods' that are as delicious as they are nutritious.
